
Burrata Toast with Blistered Cherry Tomatoes & Fresh Basil
Creamy, tangy, and bursting with flavor — this rustic toast layers rich burrata cheese with sweet, blistered cherry tomatoes and fresh basil for a simple yet irresistible dish.
Ingredients (Serves 2)
2 thick slices of sourdough or rustic bread
1 ball of fresh burrata cheese (about 4 oz)
1 cup cherry tomatoes
1–2 tbsp olive oil
1 clove garlic, peeled
Salt and freshly ground black pepper, to taste
A pinch of red pepper flakes (optional)
Fresh basil leaves, torn
Balsamic glaze or reduction (optional)
Instructions
Prep the Bread
Lightly brush the sourdough slices with olive oil on both sides. Toast in a hot skillet or under the broiler until golden and crisp. While still warm, gently rub one side of each slice with the garlic clove for added flavor.
Blister the Tomatoes
In a skillet over medium-high heat, drizzle in olive oil. Add the cherry tomatoes and cook for 5–7 minutes, stirring occasionally, until they start to blister and burst. Season with salt, pepper, and a pinch of red pepper flakes if using.
Assemble the Toast
Place toasted bread on plates. Gently tear open the burrata and spread evenly over the slices. Top with blistered tomatoes and spoon any remaining tomato juices from the pan over the top.
Finish with Basil & Glaze
Scatter fresh basil leaves generously over the toast. For a sweet-tangy finish, drizzle with balsamic glaze.
Serve immediately while warm — perfect for a quick lunch, a savory snack, or an impressive appetizer.
