🥒 Nonna Pia’s Zucchini Frittata

📋 Ingredients:

  • 2 medium zucchini, thinly sliced
  • 6 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 tbsp olive oil
  • Salt & pepper, to taste
  • Optional: a few fresh basil leaves or parsley for added flavor

👩‍🍳 Directions:

1️⃣ Sauté the Veggies:
Heat olive oil in a non-stick skillet over medium heat. Add onions and cook until soft. Add zucchini, season with salt and pepper, and cook until tender and lightly golden (about 6–8 minutes). Let cool slightly.

2️⃣ Prepare the Egg Mixture:
In a large bowl, beat the eggs with Parmesan cheese, salt, pepper, and herbs if using.

3️⃣ Combine & Cook:
Add the cooked zucchini and onions into the egg mixture. Wipe the skillet clean, add a touch more oil, then pour in the mixture. Cook on low heat for about 8–10 minutes, until the edges are set.

4️⃣ Finish the Frittata:
Option 1: Flip carefully and cook the other side for 3–4 minutes.
Option 2: Place under the broiler for 2–3 minutes until the top is golden and fully cooked.

5️⃣ Serve Warm or Cold:
Slice into wedges and enjoy with crusty bread or a fresh tomato salad.
