🍗 Nonna Pia’s Chicken Noodle Soup
📋 Ingredients:
- 1 whole chicken (or 3–4 bone-in chicken thighs)
- 10 cups water
- 3 carrots, sliced
- 3 celery stalks, sliced
- 1 onion, halved
- 3 garlic cloves, smashed
- 1 bay leaf
- Salt & pepper, to taste
- 1 tbsp olive oil
- 1 ½ cups egg noodles or your favorite pasta
- Fresh parsley, chopped (for garnish)
👩🍳 Directions:
1️⃣ Make the Broth:
Place chicken, water, onion, garlic, and bay leaf in a large pot. Bring to a boil, then reduce heat to simmer. Cook for 45–60 minutes, skimming foam as needed.
2️⃣ Remove Chicken:
Take out the chicken, shred the meat, and discard bones and skin.
3️⃣ Prepare Veggies:
Strain the broth. In a clean pot, heat olive oil and sauté carrots and celery until tender, about 5 minutes.
4️⃣ Combine:
Add broth back to the pot with veggies and shredded chicken. Simmer for 15 minutes.
5️⃣ Cook Noodles:
Add egg noodles and cook until tender, about 8 minutes.
6️⃣ Season & Serve:
Season with salt and pepper. Garnish with parsley and enjoy!
