🍤 Mediterranean Shrimp Orzo Pasta Recipe

Ingredients:
For the shrimp:
1 lb large shrimp (peeled and deveined)
2 tbsp olive oil
2 garlic cloves, minced
1 tsp paprika
Salt & pepper to taste
1 tbsp lemon juice
For the orzo salad:
1½ cups dry orzo pasta
1 cup cherry tomatoes (halved)
½ cup mixed olives (green & kalamata, sliced)
¼ cup sun-dried tomatoes (chopped)
¼ cup crumbled feta cheese
2 tbsp fresh parsley (chopped)
1 tbsp fresh basil (optional)
For the dressing:
2 tbsp olive oil
1 tbsp red wine vinegar or lemon juice
1 tsp Dijon mustard
Salt & pepper to taste
Instructions:
- Cook Orzo: Boil orzo according to package directions. Drain and rinse with cool water.
- Cook Shrimp: In a skillet, heat olive oil over medium-high. Add garlic, paprika, shrimp, salt, and pepper. Sauté until pink and slightly crispy (about 3-4 minutes). Squeeze lemon juice over and set aside.
- Make Dressing: Whisk together olive oil, red wine vinegar (or lemon), Dijon, salt, and pepper.
- Assemble: In a large bowl, mix orzo, tomatoes, olives, sun-dried tomatoes, feta, herbs, and shrimp. Drizzle with dressing.
- Toss & Serve: Gently toss everything to coat. Serve chilled or at room temp.
