- 2 tbsp heavy cream

1. Sauté Aromatics & Mushrooms
- Heat olive oil in a large pot or Dutch oven over medium.
- Add shallot or onion; sauté 2–3 minutes until softened.
- Add garlic and mushrooms; cook 5–7 minutes until browned and tender.
2. Add Pasta & Simmer
- Stir in dry pasta.
- Add broth and cream. Mix to submerge pasta.
- Bring to a gentle boil over medium-high heat.
3. Cook Pasta & Add Asparagus
- Reduce heat to medium-low. Cover and cook 10–12 minutes, stirring often.
- Add asparagus and continue cooking uncovered for 5–8 more minutes, until:
- Pasta is al dente
- Asparagus is tender-crisp
- Sauce is creamy and slightly reduced
4. Finish with Parmesan & Truffle
- Remove from heat. Stir in Parmesan until melted.
- Add 2–3 tsp white truffle oil. Mix gently and taste for seasoning.
5. Make Whipped Feta Drizzle
- In a food processor or with an electric mixer: blend feta, cream, and lemon juice until smooth and fluffy. Add more cream if needed to reach drizzle consistency.
