🐔 Parmesan-Garlic Crusted Chicken Bites

🐔 Parmesan-Garlic Crusted Chicken Bites

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 4 cloves garlic, minced 🧄
  • ½ cup grated Parmesan cheese 🧀
  • 1 tsp dried Italian herbs (or ½ tsp dried oregano + ½ tsp dried basil)
  • Salt & freshly cracked black pepper, to taste

Instructions:

  1. In a bowl, combine chicken, olive oil, minced garlic, Parmesan, herbs, salt, and pepper. Press the Parmesan onto the chicken to help it form a crust.
  2. Heat a large skillet over medium-high heat.
  3. Add the chicken and cook for 5–7 minutes, stirring occasionally, until golden, crispy, and cooked through.
  4. Set aside and keep warm.

🥔 Crispy Sage & Garlic Roasted Potatoes

Ingredients:

  • 2 medium Yukon Gold potatoes, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tbsp fresh sage, chopped 🌿 (or 1 tsp dried rubbed sage)
  • 3 cloves garlic, minced 🧄
  • Salt & freshly cracked black pepper, to taste

Instructions:

  1. Preheat oven to 200°C (400°F).
  2. Toss potatoes with olive oil, sage, garlic, salt, and pepper.
  3. Spread evenly on a baking sheet in a single layer.
  4. Roast for 25–30 minutes, flipping halfway, until golden brown and crispy.

🍄🧄🌿 Truffle Mushroom Pesto Alfredo Cream Sauce

Ingredients:

  • 2 tbsp butter 🧈
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • ¼ cup fresh basil leaves (optional, for a subtle pesto touch) 🌿
  • 1½ cups heavy cream
  • ¾ cup grated Parmesan cheese 🧀
  • 2–3 tsp white truffle oil (adjust to taste) 🍄
  • Salt & freshly cracked black pepper, to taste
  • Shaved Parmesan, for topping

Instructions:

  1. In the same skillet (or a clean one), melt butter over medium heat.
  2. Add mushrooms and garlic. Sauté for 5–7 minutes until mushrooms are soft and lightly browned.
  3. If using fresh basil:
    • Option 1: Add directly to the skillet and cook for 1 minute.
    • Option 2: For a smoother pesto effect, pulse sautéed mushrooms, garlic, and basil in a food processor, then return to skillet.
  4. Pour in cream and bring to a gentle simmer. Stir in Parmesan until smooth and melted.
  5. Add truffle oil, stir to combine, and season with salt and pepper.
  6. Keep warm on low heat.
