🍗 Garlic Herb Chicken with Chestnuts
Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 3 cloves garlic, minced 🧄
- ½ cup roasted chestnuts (peeled and cooked), roughly chopped 🌰
- 1 tbsp fresh oregano, chopped 🌿 (or 1 tsp dried)
- ½ tsp dried thyme
- Salt & freshly cracked black pepper, to taste
Instructions:
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add chicken pieces and sauté for 5–7 minutes until golden and cooked through.
- Stir in garlic, chestnuts, oregano, thyme, salt, and pepper. Cook for 2–3 more minutes to blend the flavors.
- Transfer chicken mixture to a plate and set aside.
🥔 Crispy Garlic Rosemary Potatoes
Ingredients:
- 2 medium Yukon Gold potatoes, cut into 1-inch cubes
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped 🌿 (or 1 tsp dried)
- Salt & freshly cracked black pepper, to taste
Instructions:
- Preheat oven to 200°C (400°F).
- Toss potato cubes with olive oil, garlic, rosemary, salt, and pepper.
- Spread evenly on a baking sheet. Roast for 25–30 minutes, flipping halfway through, until golden and crispy.

Ingredients:
- 2 tbsp butter 🧈
- 8 oz cremini mushrooms, sliced
- 2 cloves garlic, minced
- 5 oz fresh spinach, roughly chopped
- 4 oz crumbled feta cheese 🧀
- 1½ cups heavy cream
- ½ cup grated Parmesan cheese 🧀
- ¼ cup chestnut purée (or 2–3 tbsp finely minced roasted chestnuts mixed with a splash of cream)
- Salt & freshly cracked black pepper, to taste
Instructions:
- In the same skillet used for the chicken, melt butter over medium heat.
- Add mushrooms and garlic. Cook for 5–7 minutes until softened and browned.
- Stir in spinach and cook until wilted.
- Add crumbled feta and mix until slightly melted.
- Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan until smooth and creamy.
- Whisk in the chestnut purée. Adjust seasoning with salt and pepper to taste.
🍽️ To Assemble:
- Reduce heat under the Alfredo sauce to low. Return the chicken and chestnut mixture to the skillet and stir to coat.
- Divide the crispy potatoes between serving bowls.
- Spoon the creamy chicken-Alfredo mixture over the top.
