🍽 Nonna Pia’s Homemade Rice Balls (Arancini)
📋 Ingredients:
- 2 cups cooked Arborio or short-grain rice (cooled)
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/2 cup shredded mozzarella (optional for filling)
- 1/2 cup marinara sauce (optional for filling)
- 1 cup Italian breadcrumbs
- Salt and pepper, to taste
- Oil for frying (vegetable or light olive oil)

1️⃣ Prepare the Rice Mixture:
In a large bowl, combine the cooked rice, Parmesan cheese, 1 egg, salt, and pepper. Mix well until sticky and easy to form.
