Nonna Pia’s Fire-Roasted Peppers 🌶🔥

📋 Ingredients:

  • 4 large red bell peppers (or mixed colors)
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, thinly sliced
  • Salt, to taste
  • Fresh chopped parsley (optional)
  • A splash of red wine vinegar or lemon juice (optional)

👩‍🍳 Directions:

1️⃣ Roast the Peppers:
Place whole bell peppers directly over a gas flame or under a broiler. Turn with tongs until the skin is blackened and blistered all over (about 10–15 minutes).

2️⃣ Steam & Peel:
Transfer hot roasted peppers to a bowl and cover with a plate or plastic wrap. Let steam for 10–15 minutes to loosen the skins. Then, peel off the charred skin with your hands — just like Nonna! Remove stems and seeds.

3️⃣ Slice & Season:
Slice the peeled peppers into strips. Place in a bowl with olive oil, garlic, and a pinch of salt. Add vinegar or lemon juice for brightness, if desired.

4️⃣ Marinate & Serve:
Let the peppers sit at room temperature for at least 30 minutes to soak in the flavors. Sprinkle with fresh parsley before serving.
