🍄🌿 Creamy Mushroom Pesto Alfredo (Provolone Topped)
- 2 tbsp butter 🧈
- 4 oz cremini mushrooms, finely chopped
- 2 cloves garlic, minced
- ¼ cup fresh basil leaves 🌿
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- 2–3 slices provolone cheese 🧀
- Salt & freshly cracked black pepper to taste
🔥 Instructions
1. Hot Honey Parmesan Asparagus
Preheat oven to 200°C / 400°F.
Toss asparagus with olive oil, Parmesan, garlic, salt, and pepper. Spread on a lined baking sheet.
Roast for 10 minutes, drizzle hot honey over, then roast an additional 5–7 minutes until tender, golden, and crisp on the edges.
2. Chicken in Garlic Mushroom Alfredo
In a large skillet over medium-high heat, heat olive oil. Add chicken and cook until golden and fully cooked. Remove and set aside.
Add garlic and mushrooms to the skillet. Sauté until softened and lightly browned.
Pour in heavy cream, bring to a simmer, and stir in Parmesan until melted and smooth.
Season with salt and pepper. Return chicken to the skillet and coat in sauce. Keep warm.
3. Creamy Mushroom Pesto Alfredo
In a small saucepan, melt butter over medium heat. Add mushrooms and garlic, sauté until softened.
Stir in heavy cream and basil, bring to a simmer. Add Parmesan and stir until thickened.
Season to taste.
