🧾 Ingredients (Serves 2–3)

🐔 Garlic-Marinated Grilled Chicken

  • 2 boneless, skinless chicken breasts, sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced 🧄
  • 1 tbsp fresh oregano, chopped 🌿
  • ½ tsp dried thyme
  • Salt & freshly cracked black pepper

🥦 Crispy Parmesan Broccoli

  • 1 large head broccoli, cut into florets
  • 2 tbsp olive oil
  • ¼ cup grated Parmesan cheese 🧀
  • 2 cloves garlic, minced
  • Salt & freshly cracked black pepper

🥑🍄 Avocado Mushroom Alfredo Sauce

  • 2 tbsp butter 🧈
  • 8 oz cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 ripe avocado
  • 1½ cups heavy cream
  • ½ cup grated Parmesan cheese (plus extra for topping)
  • 1 tbsp lemon juice 🍋 (optional, for brightness)
  • Salt & freshly cracked black pepper

🔥 Instructions

1. Marinate & Grill the Chicken

In a bowl, toss chicken slices with olive oil, garlic, oregano, thyme, salt, and pepper.
Heat a skillet or grill pan over medium-high heat. Cook chicken for 2–3 minutes per side or until golden and cooked through. Set aside.

2. Roast the Crispy Parmesan Broccoli

Preheat oven to 200°C / 400°F.
Toss broccoli florets with olive oil, Parmesan, garlic, salt, and pepper.
Spread on a lined baking sheet and roast for 15–20 minutes until edges are crispy and florets are tender.

3. Make the Avocado Mushroom Alfredo

Melt butter in a large skillet over medium heat.
Add mushrooms and garlic, sauté until tender and browned.
Add the avocado and mash into the pan until mostly smooth.
Pour in heavy cream, stir well, and bring to a gentle simmer.
Add Parmesan, season with salt, pepper, and lemon juice (if using). Stir until creamy and smooth.

4. Combine Chicken & Sauce

Lower heat. Nestle the grilled chicken slices into the Alfredo sauce.
Sprinkle extra Parmesan on top and cover the skillet for 2–3 minutes to melt and infuse the flavors.

5. Assemble & Serve

Plate crispy Parmesan broccoli.
