  • 2 boneless, skinless chicken breasts

🥔 Crispy Garlic Parmesan Potatoes

  • 2 medium Yukon Gold potatoes, cut into 1-inch cubes
  • 2 tbsp olive oil
  • ¼ cup grated Parmesan cheese 🧀
  • 2 cloves garlic, minced
  • ½ tsp Italian herbs
  • Salt & freshly cracked black pepper to taste

🧀🌿 Creamy Spinach-Artichoke Alfredo Sauce

  • 2 tbsp butter 🧈
  • 2 cloves garlic, minced
  • 5 oz fresh spinach, roughly chopped
  • 1 cup marinated artichoke hearts, drained & chopped
  • 1½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese 🧀
  • Salt & freshly cracked black pepper to taste
  • 1 tbsp lemon juice 🍋 (optional, for brightness)

🔥 Instructions

1. Grill the Chicken

In a bowl, combine chicken, olive oil, garlic, oregano, thyme, salt, and pepper.
Grill or sauté over medium-high heat for 5–7 minutes per side until golden and fully cooked. Let rest and slice thinly.

2. Roast the Parmesan Potatoes

Preheat oven to 200°C / 400°F.
Toss cubed potatoes with olive oil, Parmesan, garlic, Italian herbs, salt, and pepper.
Spread on a baking sheet in a single layer and roast for 20–25 minutes, flipping halfway, until crispy and golden.

3. Make the Alfredo Sauce

In a large skillet, melt butter over medium heat.
Add garlic and sauté until fragrant. Stir in spinach and cook until wilted. Add artichokes.
Pour in cream and bring to a gentle simmer. Add Parmesan and stir until smooth and creamy.
Season with salt, pepper, and lemon juice (if using).

4. Melt in the Mozzarella
