🍄 One-Pot Pasta Base

Ingredients:

  • 1 tbsp olive oil
  • 1 medium shallot, minced (or ½ small yellow onion, finely diced)
  • 2 cloves garlic, minced 🧄
  • 8 oz cremini mushrooms, sliced
  • 1 lb asparagus, trimmed & cut into 1-inch pieces
  • 12 oz pasta (penne, rotini, cavatappi, or broken fettuccine)
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese 🧀
  • Salt & black pepper to taste

🍄🧀 Truffle Alfredo Finish

  • 2–3 tsp white truffle oil (start with 2 tsp, adjust to taste)

💨🧀 Whipped Feta Drizzle (Creamy, tangy, and bright)

  • 4 oz feta cheese, crumbled
  • 2 tbsp heavy cream
  • 1 tsp lemon juice 🍋 (optional, for added brightness)

👩‍🍳 Instructions

1. Sauté Aromatics & Mushrooms

  • Heat olive oil in a large pot or Dutch oven over medium.
  • Add shallot or onion; sauté 2–3 minutes until softened.
  • Add garlic and mushrooms; cook 5–7 minutes until browned and tender.

2. Add Pasta & Simmer

  • Stir in dry pasta.
  • Add broth and cream. Mix to submerge pasta.
  • Bring to a gentle boil over medium-high heat.

3. Cook Pasta & Add Asparagus

  • Reduce heat to medium-low. Cover and cook 10–12 minutes, stirring often.
  • Add asparagus and continue cooking uncovered for 5–8 more minutes, until:
    • Pasta is al dente
    • Asparagus is tender-crisp
    • Sauce is creamy and slightly reduced

4. Finish with Parmesan & Truffle

  • Remove from heat. Stir in Parmesan until melted.
  • Add 2–3 tsp white truffle oil. Mix gently and taste for seasoning.

5. Make Whipped Feta Drizzle

  • In a food processor or with an electric mixer: blend feta, cream, and lemon juice until smooth and fluffy. Add more cream if needed to reach drizzle consistency.

🍽️ To Serve

  • Spoon truffle Alfredo pasta into bowls.
  • Drizzle with whipped feta.
  • Garnish with extra Parmesan or cracked black pepper, if desired.
  • Serve hot and enjoy!

💡 Chef’s Tips

  • Wide Pot = Best Results: Prevents clumping and allows even liquid distribution.
  • Stir Often: Especially during final simmer to prevent sticking.
  • Truffle Tip: Use a good-quality white truffle oil and go light—just enough to accent the Alfredo.
  • Feta Finish: The whipped feta adds brightness and tang to balance the rich sauce—don’t skip it!
  • Make It Heartier: Add white beans, grilled chicken, or sautéed pancetta for protein.

Elegant yet simple, this one-pot pasta brings luxe flavor to your weeknight table.
