🍗 Garlic Herb Chicken with Chestnuts

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 3 cloves garlic, minced 🧄
  • ½ cup roasted chestnuts (peeled and cooked), roughly chopped 🌰
  • 1 tbsp fresh oregano, chopped 🌿 (or 1 tsp dried)
  • ½ tsp dried thyme
  • Salt & freshly cracked black pepper, to taste

Instructions:

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Add chicken pieces and sauté for 5–7 minutes until golden and cooked through.
  3. Stir in garlic, chestnuts, oregano, thyme, salt, and pepper. Cook for 2–3 more minutes to blend the flavors.
  4. Transfer chicken mixture to a plate and set aside.

🥔 Crispy Garlic Rosemary Potatoes

Ingredients:

  • 2 medium Yukon Gold potatoes, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped 🌿 (or 1 tsp dried)
  • Salt & freshly cracked black pepper, to taste

Instructions:

  1. Preheat oven to 200°C (400°F).
  2. Toss potato cubes with olive oil, garlic, rosemary, salt, and pepper.
  3. Spread evenly on a baking sheet. Roast for 25–30 minutes, flipping halfway through, until golden and crispy.

🍄🧀 Spinach-Feta Mushroom Alfredo with Chestnut Cream

Ingredients:

  • 2 tbsp butter 🧈
  • 8 oz cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 5 oz fresh spinach, roughly chopped
  • 4 oz crumbled feta cheese 🧀
  • 1½ cups heavy cream
  • ½ cup grated Parmesan cheese 🧀
  • ¼ cup chestnut purée (or 2–3 tbsp finely minced roasted chestnuts mixed with a splash of cream)
  • Salt & freshly cracked black pepper, to taste

Instructions:

  1. In the same skillet used for the chicken, melt butter over medium heat.
  2. Add mushrooms and garlic. Cook for 5–7 minutes until softened and browned.
  3. Stir in spinach and cook until wilted.
  4. Add crumbled feta and mix until slightly melted.
  5. Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan until smooth and creamy.
  6. Whisk in the chestnut purée. Adjust seasoning with salt and pepper to taste.

🍽️ To Assemble:

  1. Reduce heat under the Alfredo sauce to low. Return the chicken and chestnut mixture to the skillet and stir to coat.
  2. Divide the crispy potatoes between serving bowls.
  3. Spoon the creamy chicken-Alfredo mixture over the top.
  4. Serve immediately and enjoy this rich, comforting fusion dish!
