Ingredients

For the Chicken

  • 1 pound boneless, skinless chicken breast, cubed
  • 1 teaspoon salt
  • 2 teaspoons lemon pepper

For the Casserole Base

  • 2 ½ cups chicken broth
  • 1 cup uncooked white rice
  • 3 tablespoons lemon juice (fresh is best)
  • 3 tablespoons melted butter
  • 1 tablespoon lemon zest
  • 1 tablespoon minced garlic
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • ½ teaspoon ground black pepper
  • ½ teaspoon dried thyme

Instructions

  1. Preheat and Prepare the Dish
    Preheat your oven to 375°F (190°C). Lightly spray a 9×13-inch baking dish with non-stick cooking spray to prevent sticking.
  2. Mix the Casserole Base
    In the prepared baking dish, combine the following ingredients:
    • 2 ½ cups chicken broth
    • 1 cup uncooked white rice
    • 3 tablespoons lemon juice
    • 3 tablespoons melted butter
    • 1 tablespoon lemon zest
    • 1 tablespoon minced garlic
    • 1 teaspoon onion powder
    • 1 teaspoon salt
    • 1 teaspoon dried basil
    • ½ teaspoon ground black pepper
    • ½ teaspoon dried thyme
      Stir everything together to evenly distribute the seasonings.
  3. Add and Season the Chicken
    Season 1 pound of cubed boneless, skinless chicken breast with:
    • 1 teaspoon salt
    • 2 teaspoons lemon pepper
      Then add the seasoned chicken pieces directly into the baking dish and stir gently to combine with the rice mixture.
  4. Bake
    Cover the dish with foil and bake for 30 minutes. Then, remove from the oven and layer thin slices from 1 lemon over the top. Return the dish to the oven, uncovered, and bake for an additional 5 minutes, or until the rice is tender and the chicken is fully cooked through.
  5. Rest and Serve
    Remove the casserole from the oven and let it rest for 5 minutes before serving. This allows the flavors to settle and the dish to finish cooking gently.
