🍝 Pasta e Piselli Recipe
Ingredients:
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 1½ cups frozen green peas
- 1½ cups small pasta (ditalini or elbow macaroni work great)
- 4 cups vegetable broth (or water + bouillon)
- Salt & pepper to taste
- Freshly grated Parmesan cheese (optional)
- Fresh parsley for garnish (optional)
Instructions:
- Heat olive oil in a large saucepan over medium heat. Add chopped onion and sauté until soft and translucent, about 4-5 minutes.
- Stir in the peas and cook for 2-3 minutes.
- Add the pasta and pour in the broth. Bring to a boil, then reduce heat and simmer, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed (about 10-12 minutes).
- Season with salt and pepper to taste.
- Serve hot, topped with Parmesan and fresh parsley if desired.
