  • ¼ cup full-fat coconut milk
  • 3 cloves garlic, minced

  • 1 cup sliced bell peppers (any color)
  • ½ cup sliced zucchini or yellow squash
  • ¼ cup red onion, thinly sliced

  • 2 medium Yukon Gold potatoes, cut into 1-inch cubes
  • 2 tbsp olive oil
  • ¼ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp dried Italian herbs (oregano, basil, thyme)
  • Salt & freshly cracked black pepper, to taste

  • 1 tbsp olive oil
  • 6 oz cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • ¼ cup fresh basil leaves
  • 1 cup full-fat coconut milk
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt & freshly cracked black pepper, to taste

🔥 Instructions

1️⃣ Prepare the Crispy Garlic-Parmesan Roasted Potatoes

  • Preheat oven to 200°C (400°F).
  • In a bowl, toss potato cubes with olive oil, Parmesan, garlic, herbs, salt, and pepper.
