Nonna Pia’s Steak and Pasta for Lunch 🍝🥩
📋 Ingredients:
For the Steak:
- 2 ribeye or sirloin steaks
- 2 tbsp olive oil
- 2 garlic cloves, smashed
- 2 sprigs fresh rosemary or thyme
- Salt and pepper to taste
For the Pasta:
- 8 oz spaghetti or linguine
- 3 tbsp olive oil
- 3 garlic cloves, thinly sliced
- 1/4 tsp red pepper flakes (optional)
- Fresh parsley, chopped
- Salt to taste
- Grated Parmesan (optional)

👩🍳 Instructions:
1️⃣ Cook the Pasta:
Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup pasta water before draining.
2️⃣ Make the Steak:
Pat steaks dry and season generously with salt and pepper.
Heat olive oil in a skillet over medium-high. Add garlic and herbs, then the steak. Sear 3–4 minutes per side for medium-rare, basting with oil. Rest for 5 minutes before slicing.
3️⃣ Garlic Oil for Pasta:
In a pan, heat olive oil over medium heat. Add sliced garlic (and red pepper flakes if using). Cook until golden.
4️⃣ Toss Pasta:
Add drained pasta to the garlic oil. Toss well, adding a splash of pasta water if needed. Mix in parsley and adjust salt.
5️⃣ Serve:
Plate pasta and top with steak slices. Garnish with Parmesan and more parsley if desired.
