Here’s Nonna Pia’s simple, rustic recipe for Roasted Peppers—a flavorful staple in Italian kitchens that’s perfect as a side dish, sandwich filler, or antipasto!
🌶 Nonna Pia’s Roasted Peppers
📋 Ingredients:
- 4 large bell peppers (red, yellow, or orange)
- 2–3 cloves garlic, thinly sliced
- 2–3 tbsp olive oil
- Salt, to taste
- Fresh basil or parsley (optional)
- A splash of red wine vinegar or lemon juice (optional)

👩🍳 Directions:
1️⃣ Roast the Peppers:
Place whole peppers on a baking sheet under a broiler or over an open flame. Roast, turning occasionally, until skins are blackened and blistered on all sides (about 10–15 minutes).
2️⃣ Steam & Peel:
Transfer hot peppers to a bowl and cover tightly with plastic wrap or a lid. Let steam for 10 minutes to loosen skins. Peel off charred skins, remove seeds and stems, and slice peppers into strips.
3️⃣ Dress the Peppers:
In a bowl, toss roasted pepper strips with sliced garlic, olive oil, and salt. Add fresh herbs or a splash of vinegar or lemon juice if desired.
4️⃣ Serve & Enjoy:
Delicious warm or chilled. Great on crusty bread, in salads, or served alongside meats and cheeses.
