🌶 Nonna Pia’s Roasted Peppers

📋 Ingredients:

  • 4 large bell peppers (red, yellow, or orange)
  • 2–3 cloves garlic, thinly sliced
  • 2–3 tbsp olive oil
  • Salt, to taste
  • Fresh basil or parsley (optional)
  • A splash of red wine vinegar or lemon juice (optional)

👩‍🍳 Directions:

1️⃣ Roast the Peppers:
Place whole peppers on a baking sheet under a broiler or over an open flame. Roast, turning occasionally, until skins are blackened and blistered on all sides (about 10–15 minutes).

2️⃣ Steam & Peel:
Transfer hot peppers to a bowl and cover tightly with plastic wrap or a lid. Let steam for 10 minutes to loosen skins. Peel off charred skins, remove seeds and stems, and slice peppers into strips.

3️⃣ Dress the Peppers:
In a bowl, toss roasted pepper strips with sliced garlic, olive oil, and salt. Add fresh herbs or a splash of vinegar or lemon juice if desired.

4️⃣ Serve & Enjoy:
