🍩 Nonna Pia’s Ciamelle (Italian Bread Donuts)

These traditional Italian ring-shaped donuts are a beloved treat in many Italian towns. They’re soft and chewy, gently sweet, and perfect with coffee or as a festive snack.


📋 Ingredients:

  • 4 cups all-purpose flour
  • 1 tablespoon active dry yeast
  • 1/2 cup warm water (about 110°F / 45°C)
  • 1/2 cup warm milk
  • 2 tablespoons granulated sugar
  • 1/4 cup olive oil (or vegetable oil)
  • 1 teaspoon salt
  • Zest of 1 lemon (optional, but adds lovely flavor)
  • Extra flour (for kneading)
  • Sugar or anise seeds (for topping, optional)
  • Oil for frying (if not baking)

👩‍🍳 Instructions:

1️⃣ Activate the Yeast:
In a small bowl, mix the yeast with warm water and a pinch of sugar. Let sit for 5–10 minutes until foamy.

2️⃣ Make the Dough:
In a large bowl, combine flour, sugar, and salt. Stir in the lemon zest (if using). Add the activated yeast, warm milk, and oil. Mix until a dough forms, then knead on a floured surface for 8–10 minutes until smooth and elastic.

3️⃣ Let It Rise:
Place the dough in a lightly oiled bowl, cover with a clean towel or plastic wrap, and let rise in a warm place for 1 hour or until doubled in size.

4️⃣ Shape the Ciamelle:
Punch down the dough. Divide it into equal portions, roll each into a rope about 6–8 inches long, and form into a ring, pinching the ends to seal.

5️⃣ Boil the Rings:
Bring a large pot of water to a gentle boil. Drop a few rings in at a time and boil for about 30 seconds. Remove with a slotted spoon and place on a clean towel to drain and dry slightly.

6️⃣ Bake or Fry:

  • To Bake: Place rings on a parchment-lined baking sheet. Bake at 375°F (190°C) for 20–25 minutes until golden brown.
  • To Fry: Heat oil to 350°F (175°C). Fry each ring until golden and puffed, turning once. Drain on paper towels.

7️⃣ Finish & Serve:
While still warm, roll the ciamelle in sugar or top with anise seeds for extra flavor. Enjoy fresh!
