📋 Ingredients:

  • 1 lb ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 garlic cloves, minced
  • 1 egg
  • 1/4 cup milk
  • 1 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • 1/4 cup marinara sauce
  • 1/4 cup shredded mozzarella cheese

👩‍🍳 Directions:

1️⃣ Preheat & Prep
Preheat your oven to 375°F (190°C). Lightly grease a muffin tin.

2️⃣ Make the Mixture
In a large bowl, mix ground chicken, Parmesan, breadcrumbs, garlic, egg, milk, parsley, oregano, onion powder, salt, and pepper. Combine gently—avoid overmixing.

3️⃣ Shape & Bake
Divide the mixture evenly into 6 muffin cups. Press gently to shape.
Bake for 20–25 minutes, until golden and cooked through.

4️⃣ Add Topping
Remove from the oven. Spoon marinara sauce over each mini meatloaf and top with shredded mozzarella.

5️⃣ Final Bake
Return to oven for 5 more minutes, or until cheese is melted and bubbly.
