🍝 Pasta e Piselli Recipe

Ingredients:

  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 1½ cups frozen green peas
  • 1½ cups small pasta (ditalini or elbow macaroni work great)
  • 4 cups vegetable broth (or water + bouillon)
  • Salt & pepper to taste
  • Freshly grated Parmesan cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Heat olive oil in a large saucepan over medium heat. Add chopped onion and sauté until soft and translucent, about 4-5 minutes.
  2. Stir in the peas and cook for 2-3 minutes.
  3. Add the pasta and pour in the broth. Bring to a boil, then reduce heat and simmer, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed (about 10-12 minutes).
  4. Season with salt and pepper to taste.
  5. Serve hot, topped with Parmesan and fresh parsley if desired.
