Strawberry and Cream Crepes

Ingredients:

For the Crepes:

1 cup all-purpose flour

2 large eggs

1 1/2 cups milk

2 tbsp melted butter

1 tbsp sugar (optional)

1/4 tsp salt

1/2 tsp vanilla extract (optional)

For the Filling:

1 cup heavy whipping cream

2 tbsp powdered sugar

1/2 tsp vanilla extract

1 lb fresh strawberries, hulled and sliced

For Topping:

Extra strawberries

Whipped cream

Powdered sugar (for dusting)


Instructions:

  1. Make the Crepe Batter:
  2. In a mixing bowl, whisk together flour and eggs.
  3. Gradually add in the milk, whisking to avoid lumps.
  4. Stir in melted butter, sugar, salt, and vanilla. Mix until smooth.
  5. Let the batter rest for at least 30 minutes in the fridge.
  6. Cook the Crepes:
  7. Heat a non-stick skillet over medium heat. Lightly grease with butter or oil.
  8. Pour 1/4 cup of batter into the pan and swirl to coat evenly.
  9. Cook for about 1–2 minutes until the bottom is light golden, then flip and cook for 30 seconds more.
  10. Transfer to a plate and repeat with the remaining batter.
  11. Make the Whipped Cream:
  12. In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  13. Assemble the Crepes:
  14. Place a few spoonfuls of whipped cream down the center of each crepe.
  15. Add a handful of sliced strawberries.
  16. Fold or roll the crepes.
  17. Garnish and Serve:
  18. Top with extra whipped cream, sliced strawberries, and a dusting of powdered sugar.
  19. Serve immediately.
