🦃 Recipe: Nonna Pia’s Italian-Style Thanksgiving Turkey

Ingredients:

  • 1 whole turkey (12–14 lbs)
  • 1/2 cup olive oil
  • 1/2 cup unsalted butter, softened
  • Zest of 2 lemons
  • 6 garlic cloves, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Optional: 4 slices pancetta (for draping)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Mix butter, olive oil, lemon zest, garlic, rosemary, thyme, salt, and pepper into a paste.
  3. Gently separate turkey skin from meat and rub mixture under skin and over the surface.
  4. Place turkey in a roasting pan. Drizzle with lemon juice. Optionally drape with pancetta.
