🧾 Ingredients (Serves 2–3)

🐔 Garlic & Herb Sautéed Chicken with Mushrooms and Veggies:

  • 1 lb boneless, skinless chicken breasts, cut into strips
  • 1 tbsp olive oil
  • 3 cloves garlic, minced 🧄
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • 8 oz cremini mushrooms, sliced 🍄
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • Salt & freshly cracked black pepper to taste

🥔 Crispy Garlic-Parmesan Roasted Potatoes:

  • 2 medium Yukon Gold potatoes, cut into ½-inch cubes
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • ¼ cup grated Parmesan cheese 🧀
  • ½ tsp dried oregano
  • Salt & freshly cracked black pepper to taste

🍅 Creamy Sun-Dried Tomato Mushroom Alfredo Sauce:

  • 2 tbsp butter 🧈
  • 4 oz cremini mushrooms, sliced
  • ¼ cup sun-dried tomatoes (oil-packed), chopped
  • 2 cloves garlic, minced
  • 1½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese 🧀
  • Salt & freshly cracked black pepper to taste

🔥 Instructions

1. Sauté Chicken & Veggies:

Heat olive oil in a large skillet or wok over medium-high.
Add chicken and season with garlic, oregano, basil, thyme, salt, and pepper. Sauté until golden and cooked through.
Add mushrooms, bell pepper, and zucchini. Stir-fry until tender-crisp.
Remove from skillet and set aside.

2. Roast the Garlic-Parmesan Potatoes:

Preheat oven to 200°C (400°F).
Toss cubed potatoes with olive oil, garlic, Parmesan, oregano, salt, and pepper.
Roast on a baking sheet for 20–25 minutes, flipping halfway, until crispy and golden.

3. Make the Sun-Dried Tomato Mushroom Alfredo Sauce:

In the same skillet, melt butter over medium heat.
Add mushrooms and garlic, sauté until softened and browned.
Add chopped sun-dried tomatoes and stir.
Pour in heavy cream and bring to a gentle simmer.
Stir in Parmesan until melted and smooth. Season with salt and pepper.

4. Combine & Melt Mozzarella:

Return sautéed chicken and veggies to the skillet.
Stir to coat with sauce.
Sprinkle mozzarella over top, cover skillet, and let melt until gooey and irresistible.

5. Assemble & Serve:

Divide crispy garlic-Parmesan potatoes between plates or bowls.
Top with generous spoonfuls of the creamy Tuscan chicken stir-fry.
