Recipe: Grilled Vegetable Platter with Burrata (or Mozzarella)

Ingredients:

1 ball of fresh burrata or mozzarella

1 zucchini, sliced lengthwise

1 eggplant, sliced lengthwise

1 red bell pepper, cut into wide strips

1 yellow bell pepper, cut into wide strips

1 carrot, sliced thinly lengthwise

A handful of arugula

Olive oil

Balsamic glaze

Salt and pepper

Fresh basil, for garnish

Chopped parsley (optional)

Instructions:

  1. Preheat Grill/Pan: Heat a grill or grill pan over medium-high heat.
  2. Prepare Vegetables: Lightly brush all sliced vegetables with olive oil. Season with salt and pepper.
  3. Grill: Grill the vegetables until tender and nicely charred—about 2-3 minutes per side. Set aside to cool slightly.
  4. Assemble Plate: On a large platter, arrange arugula at the base, then fan out the grilled vegetables in a circular pattern.
  5. Add Burrata: Place the burrata (or mozzarella) in the center of the platter.
  6. Finish: Drizzle balsamic glaze over the veggies. Garnish with fresh basil and parsley.
