🍽 Nonna Pia’s Stuffed Mushrooms
Ingredients:
- 16 large white mushrooms, stems removed and saved
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 3 tbsp olive oil (plus more for drizzling)
- Salt and pepper, to taste
- Optional: 1/4 cup finely chopped mushroom stems or cooked Italian sausage

Directions:
1️⃣ Preheat Oven:
Preheat to 375°F (190°C). Lightly oil a baking dish.
2️⃣ Prepare Filling:
Finely chop the mushroom stems (if using). In a skillet, heat 1 tbsp olive oil. Sauté garlic and chopped stems (or sausage) for 2–3 minutes.
3️⃣ Mix Stuffing:
In a bowl, combine breadcrumbs, Parmesan, parsley, sautéed mixture, 2 tbsp olive oil, salt, and pepper. Mix until crumbly but moist.
4️⃣ Stuff Mushrooms:
Fill each mushroom cap generously with the breadcrumb mixture and place in the baking dish.
5️⃣ Bake:
Drizzle with olive oil. Bake for 20–25 minutes, or until golden on top and mushrooms are tender.
6️⃣ Serve:
Serve warm, garnished with extra parsley or a sprinkle of cheese.
