Calabrian Dinner: Mozzarella & Salsiccia Plate

In Calabria, dinner doesn’t have to be elaborate to be unforgettable. A plate with fresh mozzarella and a sizzling piece of salsiccia (Italian sausage) captures the essence of this southern Italian region—bold, rustic, and deeply satisfying. Calabrians embrace the philosophy of “cucina semplice”—simple cooking that lets the ingredients shine. The mozzarella, soft and milky, often comes from local dairies and is best enjoyed at room temperature, releasing its subtle aroma and creamy texture. It’s the perfect contrast to salsiccia Calabrese, a coarsely ground pork sausage seasoned with chili pepper, wild fennel seeds, and sometimes a hint of garlic or wine. Whether grilled, pan-seared, or roasted, the sausage releases intense flavors that mingle beautifully with a bite of fresh cheese. Add some crusty bread and maybe a few olives or grilled vegetables, and you’ve got a true Calabrian feast on a plate—unpretentious, hearty, and absolutely delicious. It’s the kind of meal that brings people together, savored slowly with good company and a glass of local red wine.
