Mediterranean Open Sandwich

Ingredients:

Rustic sandwich bread, halved

Extra virgin olive oil (brushed generously)

Cherry tomatoes, halved

Anchovy fillets

A mix of cheeses (looks like Parmigiano, semi-soft sheep cheese, and a creamy soft cheese)

Fresh arugula

Optional: pesto or herb dressing spread on the base

Assembly Instructions:

  1. Drizzle or brush the inside of the bread with olive oil.
  2. Spread a thin layer of pesto or herb dressing on the bottom half.
  3. Layer with halved cherry tomatoes.
  4. Add anchovy fillets for a salty kick.
  5. Place slices of the various cheeses evenly on top.
  6. Optionally, add fresh arugula before closing the sandwich or serve on the side.

Serving Tip: Toast lightly or press in a sandwich grill for a warm, melty version.
