2 tbsp olive oil

1 onion, finely chopped

2 garlic cloves, minced

1 carrot, finely chopped

1 celery stalk, finely chopped (optional)

500g (1 lb) ground beef

2 tbsp tomato paste

1 can (400g) chopped tomatoes

1 tsp dried oregano

1 tsp dried basil

Salt and black pepper to taste

1 tsp sugar (optional, to balance acidity)

100 ml red wine or beef broth (optional)

For the Pasta:

400g spaghetti

Salt for boiling water

For the Topping:

1 to 1½ cups grated cheese (cheddar or a blend of mozzarella and parmesan)

Instructions:

  1. Make the Sauce:

Heat olive oil in a large skillet or saucepan over medium heat.

Add chopped onions, garlic, carrot, and celery. Cook until soft (about 5–7 minutes).

Add ground beef and cook until browned, breaking it up with a spoon.

Stir in tomato paste and cook for 2 minutes.

Add canned tomatoes, herbs, salt, pepper, and sugar. Pour in wine or broth if using.

Reduce heat and let simmer uncovered for at least 20–30 minutes, stirring occasionally.

  1. Cook the Pasta:

In a large pot, boil salted water and cook spaghetti according to package instructions.

Drain the pasta and set aside.

  1. Assemble the Dish:

Place a generous portion of spaghetti on a plate.

Spoon a hearty amount of Bolognese sauce over the top.

Sprinkle with grated cheese while the sauce is still hot so it begins to melt.

Add extra black pepper if desired.
